“This is not one of those skinny ice cream sandwiches, this is a fat boy!”

RICHMOND – Friday, August 2nd is National Ice Cream Sandwich Day and certainly there’s a local connection to this celebration of frozen treats. FatBoy Ice Cream Sandwiches are manufactured in Richmond by Casper’s Ice Cream and sold all over the United States. Human Resource Manager at Casper’s Ice Cream, Jordan Knutson, was a guest on KOOL 103.9 with Dave Denton Friday and said Casper’s has been producing the famous ice cream sandwiches for decades.

“Decades ago, Casper’s Ice Cream started making a larger-than-usual ice cream sandwich. At the time they were just selling it as an ice cream sandwich. In about 1985, a member of the Casper Merrill family, who was a sales (representative) in California, was pitching this ice cream sandwich and said, ‘This is not one of those skinny ice cream sandwiches, this is a fat boy!’ And that name stuck.”

Knutson said the name initially ruffled some feathers, but the company has had fun with it and enjoyed the whimsical name that describes the ice cream sandwich.

The famous ice cream sandwich is distributed all over the United States, including Alaska and Hawai’i.

“With the recent growth in past years, it’s something that’s really exciting to be a part of as we grow the FatBoy nation,” Knutson said. “It’s a high-quality product that you can take pride in. It makes you smile.

“It makes people happy. When you read the online comments, it’s entertaining and brings a lot of satisfaction to know that’s what we’re doing every day.”

Over the years, the company has added additional flavors to their traditional vanilla ice cream placed between two chocolate cookies. Those flavors include Cookies ‘n Cream, S’Mores, Chocolate Chip Cookie, Mint Chocolate Chip, Strawberry Ice Cream, Chocolate Ice Cream, and Key Lime Ice Cream. The Richmond plant also produces two seasonal flavors around Christmas: an Egg Nog version and a Peppermint version.

Knutson said Casper’s Ice Cream has seen a 75% growth in employment over the last few years, and now employs over 250 people in Cache Valley. The company produces more than just FatBoy Ice Cream Sandwiches, but also produces a nut sundae, FatBoy Freezies, and recently started a new brand: Jolly Llama, a dairy-free, gluten-free, non-GMO sorbet pop.

The factory is located at 11805 North 200 East in Richmond. A malt shop is attached to the factory where people can buy various flavors of ice cream, Casper’s products and factory rejects in bulk.
