Casper’s new facility gives employees elbow room

The expansion at Casper’s Ice Cream, Inc. in Lewiston is projected to be completed later this year. Paul Merrill is the third-generation owner of the company that produces Fat Boy ice cream sandwiches.

“As we approached capacity on this old building,” Merrill said, “it became apparent we needed more production capacity and we didn’t really have room.”

He said the plans that started 10 years ago have already helped local communities.

“Two years ago we were at 85 employees and now we’re at 185,” Merrill said. “So we’ve already hired the new employees we need to expand into the new facility because of how busy we are.” 

Merrill said 85 percent of their employees come from north of Logan up to Preston.

“We have goals to continue to grow,” Merrill said. “So in the next 10 to 15 years quadruple our growth and we’re looking to do that in our brands – Fat Boy.”

He said they sized the expansion to be able to handle four times their current production.
